Black Hills Raw Vegan Potluck!

Oh how exciting this was. Last week when I was at the Breadroot Co-Op in Rapid City I saw an inconspicuous flyer for a raw food potluck at 3 o’clock every third Sunday of the month. (If you’re in the area, it still applies!)

You can imagine my excitement, as this place seems as stale as …well, anyways its hard finding other raw food enthusiasts. I texted my only raw friend and we both decided to go.

For the potluck I got pretty ambitious aka overly excited and made a few things.

Tomato Basil Crackers… (Tomatoes, sun-dried Tomatoes, Basil, Spices, Nutritional Yeast, and Flax)

 

Tomato Crackers & Mock Tuna

 

Mock ‘Tuna’ (Carrot Pulp, Almonds, cashews, Bubbies sauerkraut juice, dill, Braggs sea spices, and nutritional yeast)

With Lettuce ‘sandwhich’ wraps.

And dun dun dun…

Low-Glycemic Key Lime Pie!  The crust was a mixture of macadamias, almonds, chia, xylitol, and a lil bit of sea salt.

The filling was 3 Cups of Irish Moss, 2 Tbsp Coconut Oil, 1 Avocado, 1 Lime, ¼-1/2 cup of xylitol & a squeeze of agave nectar.

I’ll make a proper recipe post for it once I perfect it.

Anyways- we arrived, food in tow…and NO one knew anything about it! Whoever made the flyer didn’t bother to show up and it was just my friend Blaine and I until a couple who was volunteering decided to join us (which was great) and later another couple came with awesome food too, after we wolfed down a lot of the food.. LOL!

Banana-Cacao Pie – was super delicious

Cabbage Salad (I believe Cabbage, almonds, sesame seeds, apple cider vinegar, olive oil, and hmm… I can’t remember the last ingredient)

And Blaine (my friend) brought Raw-Vegan Brownies!

I’m so jealous because 1) he used a Cuisinart Food Processor and 2) his brownies actually came out like ‘real’ brownies. Mine are always too liquidy. His secret?More nuts, waaaaay less dates. *Facepalm*

 

Overall, although there wasn’t a huge turnout the food was awesome and the people were super cool. We even plan on doing a picnic, but this time (because I’m in charge) there will be a LOT more advertisement about it in every health food store so hopefully more people show up.

 

And this is why I love Raw Food! Beautiful
