Butternutty Dessert Cups!


{High Raw, Vegan, Paleo}

A delicious blend of cardamom, peanut butter, coconut, and banana infused with love!

I created these hoping to create a delicious creamy dessert that everyone would love.

These are approximations because I rarely measure when creating my medicine!

You’ll need:


Crust:

 

1 and 1/4 .to..1/2 C Almonds

raw soaked almonds
4 to 5 Tbsp Raw Almond Butter ( I LOVE this brand! Very yummy and kind of addicting!)

2 to 3 tsp Cardamom

3 to 4 drops Stevia (every brand is different)… I use NuNaturals which is pretty potent stuff.

 
 
 

Filling/Cream:

1 and a 1/2 Bananas

1/2 Cup of Fresh Coconut

2 Tbsp Coconut Oil

2 Tbsp Peanut Butter Powder (I use this brand!)

1/2 to 3/4 C your choice of milk (Almond, Hemp, Soy, Raw Milk..etc)

2 Tbsp Chia Seeds

I made these without a Vita-Mix, instead used a Food Processor and mini (electric) blender.

 

 

Directions:

 

1. Food Process almonds until small and lightly chunky

2. Put in medium sized bowl, add almond butter and cardamom. Mix with a spoon!

3. Fill Silicone cupcake shells with modest amounts for the crust.

4. In a blender, add filling/cream ingredients and blend!

5. Add on top of crust.

6. Take a second, add your love, then…

7. Freeze ButterCups in freezer for a minimum of 1 and 1/2 hours.

8. Enjoy!
