‘Cheezy’ Cauliflower Popcorn Bites {Raw, Vegan}

Hey, lovely! Happy New Year!

I hope 2016 has been both eventful and a beautiful learning period for you. Personally, I don’t really believe in ‘New Year’s Resolutions’, as I think every day is a brilliant day to live a life you love. After all, only THIS moment exists (and I’m super glad you’re using it to read this article).

The great thing about healthy eating is that it really does affect mind, body, and spirit. When your cells are being nourished properly, you have more energy and motivation to workout. And, as we know, exercise is an important part of the equation to look and feel better.

Enough of me yammering on about New Year’s. What you likely clicked on this article for was to claim the ‘Cheezy’ Cauliflower Popcorn Bites {Raw, Vegan} recipe which, seriously, is SO good.

Personally, I LOVE cauliflower. But I find my body digests it best when it’s marinated and dehydrated, rather than just cooked. That’s because dehydrated cauliflower still contains the enzymes which are essential for digestion. Plus, the cruciferous vegetable retains plenty of nutrients which have been shown to decrease inflammation, ward off cancer, and support digestion.

Because cauliflower has a pretty basic (read: flavorless) flavor, it’s a GREAT vegetable to work with. And, when it’s dehydrated, cauliflower pieces get crunchy and incredibly yummy if you put the right dressing on it.

That’s why I’m sharing this delectable recipe. Note: These images are from TheFullHelping.com, as I keep eating the cauliflower bites before I take pictures (what can I say, they’re my weakness…). I’ll update this post with unique images soon. 😉

‘Cheezy’ Cauliflower Popcorn Bites {Raw, Vegan}

Preparation Time: 20 Minutes + Dehydration Time

Serving Size: 1-2

Ingredients: 

  • 1 small head of cauliflower, chopped into bite-size pieces
  • 1 Tbsp lemon juice
  • 2 Tbsp nutritional yeast
  • 1/2 Tbsp extra virgin coconut oil
  • 1/4 tsp paprika
  • 1/4 tsp Himalayan sea salt
  • 2 large pinches of turmeric (anti-inflammatory
  • 5 drops of liquid stevia (or a small dollop of maple syrup)
  • (optional: large pinch of chili powder)

Directions:

  1. Set chopped cauliflower aside, mix remaining ingredients in blender.
  2. Pour mixture over cauliflower and massage into the cruciferous vegetable. Make sure all pieces are covered with the marinade.
  3. Spread onto dehydrator trays with teflex sheets (or parchment paper)
  4. Dehydrate at approximately 118 degrees for 4-6 hours; stir mixture, dehydrate for another 5-6 hours until crunchy.
  5. Serve with {raw, vegan} Ranch Dressing or eat plain!
