Dr. Esselstyn visits the Pom!

Wowsers! I realize it’s been almost one month since this event happened, but I finally uploaded the video of Dr. Esselstyn (“Prevent & Reverse Heart Disease” & “Forks over Knives”) coming to my workplace (the Pomegranate Café) and speaking about how a high-carbohydrate, low-fat, low-protein diet is the best diet for mankind and how you, too can heal your life and stop being a victim due to your food choices.

There’s a lot to watch in the video, so have at it!


He reminds me of a very tall, skinny teddy bear. His energy and demeanor is just so pleasant, and his ‘grandpa-like’ quality really is captivating; you know he cares and that’s just even more inspiring to be a part of this movement.

**If you don’t know, Dr. Esselstyn advocates a high-carbohydrate, low-protein, low-fat food ratio for the human species. (I totally agree, but we do have separate viewpoints on fruits vs complex carbs). In my opinion fruit > grains, legumes, and other complex carbohydrates, but when it comes down to it – this is the ratio one should live by. All long-term vegans and cultures experiencing longevity all have a high-carbohydrate diet – and as pure, low-sodium, non-processed/refined, and simple as possible. **

 

The menu was awesome to create! Almost ALL gourmet food is high in fat and refined sugar (even if vegan) so this night’s menu was a great challenge but an extraordinary pleasure to create.

We created the following menu (which was cooked vegan but super simple, low-fat, low-sodium, and 100% the way you should indulge if you do!)

  • o   Sprouted Kamut Pizza bread with low-fat/low-sodium marinara, cauliflower-celery root “cheese”, and roasted vegetables
  • o   Orange-Vinaigrette salad with seasonal fruit (pomegranate seeds, apples, and persimmons). Low-fat dressing made from orange juice (raw), mustard, ginger, cilantro, and a tad bit of maple.
  • o   Sprouted Quinoa & Lentil Soup

   & For dessert:           

  • o   Brown Rice Pudding (with house-made (raw) almond milk, cinnamon, vanilla powder, and garnish.

It was inspiring hearing the stories of people healing their lives just by going VEGAN!

(Dr. E even asked for extras of the pizza!! 😉
