How To: Make ‘Magic’ Coffee! [Vegan Recipe]

Hey there, lovelies! Oh my goodness, I’ve missed you all so much. In case you’re a regular follower, you’re likely aware that I haven’t shared any goodness for a while. I could make up a whole lot of excuses (which, really, are legit: school, work, social life, repeat), but who cares, right?

Anyways, today I bring you a SUPER special recipe that everyone at the “I AM” yoga retreat LOVED. Guess what it’s called?

“Magic Coffee”. 

And yes, guys. It truly is magic. What makes it so magical? Well, let me break it down for you:

  1. It’s bursting with healthy fats which nourish and support a healthy endocrine system.
  2. It tastes freaking DELICIOUS
  3. It has coffee. OR, you could use a substitute like Dandy Blend (which I LOVE). But yeah, if you do coffee, it’s amazing.
  4. It’s super easy to make
  5. It includes cinnamon, so it helps to balance blood sugar and has a nice spiciness to it.
  6. It’s like Bulletproof coffee but BETTER because it’s vegan. (yay!)

I could go on and on, but basically, this drink rocks. And, with it getting cold and everything (actually, it hasn’t snowed ONCE yet, and it’s November!!), it’s a great beverage to reach for. Without further ado, here’s how you can make your OWN magic coffee!

“Magic Coffee” {Vegan}

Serving Size: 2

Preparation Time: 5-10 Minutes

Ingredients:

  • 3 1/2 cups of freshly-brewed coffee (Bulletproof is great because it’s low in mycotoxins)
  • OR 3 cups of HOT water + 2 1/2 Tbsp Dandy Blend (coffee substitute)
  • 1 Tbsp extra virgin coconut oil 
  • 1/2 cup raw, vegan almond milk (or cashew, walnut, hemp, etc…)
  • 1/4-1/2 tsp vanilla extract (alcohol-free)
  • 1-3 dashes of cinnamon
  • pinch of sea salt
  • 1-1 1/2 Tbsp raw honey or 6-8 drops of stevia*

Directions: 

  1. Add freshly-brewed coffee to a Vita-Mix blender. Add in the remaining ingredients.
  2. Starting on low, process the mixture until you attain high-speed and blend for 20-30 seconds.
  3. Slow the blender down to low, let mix for approximately 10 seconds more so the ‘fluff’ settles into all layers.
  4. Pour into 2-3 mugs and ENJOY!
