How To Make Super Delicious {Raw, Vegan} Dehydrated ‘Chick-N’

Okay, faux what? While I dislike rebranding hearty plant-based alternatives as a ‘mock’ variety of a dead animal, it’s what catches peoples’ attention.

So, like it or not, this recipe is for faux chick-n that tastes so good, I’ve actually had people (vegetarian or vegan, as expected) freak out on me for serving them meat.

“No, it’s ‘fake’ …erm, chick-n” I’ve always stated.

Regardless, sometimes I have to show them the dehydrator to prove that it is, in fact, made from some unlikely plant-based ingredients and, of course, with lots of love.

Because finding suitable, grounding meat alternatives can be tough for those transitioning to a high-vibe, plant-baed diet, I’m sharing this super awesome recipe with you guys today.

Use it: 

  1. On Salads
  2. On Raw Fettucine Pasta
  3. In Sandwiches (raw or not – who cares!)
  4. In wraps
  5. On its own w/ ‘raw’ BBQ sauce or Ketchup!

Raw ‘Chick-N’ {Plant-based, Live-Food, Delicious*}

Preparation Time: 15 Minutes

Serving Size: 8 Servings

Ingredients:

Nuggets:nuggets6

  • 1/3 c cup coconut nectar
  • 2 T apple cider vinegar
  • 3 T chia seeds, soaked 10 mins
  • 2 cloves garlic
  • 2 T chili powder
  • 1 T miso
  • 1 t cayenne
  • 1 t cumin
  • 1 t salt
  • 1 cup sun dried tomatoes, soaked 1 hour
  • 1 red bell pepper
  • 1/2 onion
  • 3 ears corn
  • 1 cup nutritional yeast
  • 2 cup ground sunflower seeds
  • 2 cup ground sesame seeds

(Optional): Coating / Breading

  • 1 cup ground flaxseed
  • 1 t chile pepper
  • 1/2 t salt

Directions:

  1. Add the maple syrup and apple cider vinegar to the blender and pulse.Next add in the garlic, chili powder, miso, cayenne, cumin, salt, and chia seeds. Blend again.
  2. Add onion, tomato, sun-dried tomatoes, and corn. If you start having problems blending, just use a spatula to move the mixture down and make sure everything is getting blended.
  3. Pour this mixture into a bowl and clean out your blender.
  4. Grind sunflower and sesame seeds in a high-speed blender or coffee grinder.
  5. Add your ground seeds and nutritional yeast in with the mixture already in your bowl, and mix everything together with a spatula.
  6. In a small bowl, assemble your breading mixture by just tossing together your ground flax, chili pepper, and salt.
  7. To make our patties, use a large soup spoon to scoop it up, and form into a patty shape, coat each patty with your breading mixture, then lay it on your dehydrator sheet, or on a cookie sheet with parchment paper.
  8. Dehydrate overnight, store in an air-tight container up to 7 days.

Yes, it seems like a lot of work. It actually goes really fast once you get the hang of it.
