Nourishing Potato Curry w/ Kale [Vegan, GF, DF]

Hey there!

So, back in the States, it is cold. 

In Africa, notsomuch. 

Days here range from mid 70’s (F) to mid 80’s (F). And when the sun isn’t beating down, there is refreshing rain to dampen the dust.

But, as Kenya is heavily influenced by Indian culture, it only makes sense that you – in the cold – and I – in the heat – both indulge in a super tasty and pretty healthy potato curry.

What makes this dish so good? 

Well, for one, it’s unprocessed, it’s simple to make, and it’s loaded with hearty plant foods, including kale, potatoes, peas, and tomatoes.

Oh, and it features my favorite food ever: coconut.

Indian Curry w/ Potatoes & Kale [GF, Dairy-Free, Vegan]

Preparation Time: 20 – 25 Minutes
Serving Size: 4

Ingredients:

  • 1 Tbsp Coconut Oil
  • 2-3 Cloves Garlic, minced
  • 1 Medium Onion, diced
  • 4 Small potatoes or 2 Medium/Large Potatoes
  • 1 Can Full-Fat Coconut Milk
  • 1 Cup Tomatoes, diced
  • 1 Cup Frozen Peas, thawed
  • 1/4 tsp Red Pepper
  • 1 tsp Curry Powder
  • 1 tsp Turmeric
  • 1 tsp Sea Salt
  • 1 tsp Raw Honey or Maple Syrup
  • 1 Tbsp Fresh Ginger, minced

Directions:

  1. Add 1 Tbs coconut oil to large skillet on medium heat. Add minced garlic.
  2. Once garlic is fragrant, add diced onion and cook until starting to turn translucent – about 5 minutes.
  3. Add coconut milk, diced tomatoes, fresh ginger, and spices. Stir to combine.
  4. Bring to a low simmer and add potatoes.
  5. Cover and let simmer on low/medium until potatoes are softened, 10 – 15 minutes.
  6. Add frozen peas, raw honey (or maple syrup), and stir; let sit for 5 minutes.
  7. Stir again and serve. Store leftovers in an airtight container for up to 1 week.
