The following dessert recipe utilizes Spirulina and Irish Moss, two super foods I love to use in my kitchen. You’ll find that they really add to the following dessert recipe, {Raw} Chocolate Mint Crème Pie. dessert24

{Raw} Chocolate-Mint Pie

Preparation Time: 20-25 Minutes

Serving Size: 8

Brownie Crust:

Ingredients:

1 Cup Almonds

1 1/2 Cup Walnuts/Pecans

1 Cup Dates, chopped

1/3 Cup Raw Cacao

1 tsp Vanilla

1/8 tsp Sea Salt

1-2 tsp Water

Directions:

1) In a food processor, grind almonds, pecans, and/or walnuts until a flour. Add your dates and process until a sticky mixture forms.

2) Add in your remaining ingredients and process until well combined.

3) Using a cheesecake pan (or a pie tin), sprinkle some dried coconut on the bottom (keeps the crust from sticking), and press your crust firmly into the mold.

4) Set in the freezer while you prepare your filling.

Mint Crème Filling:

Ingredients:

1/4 Cup Irish Moss (with 1/2 cup water) blended on high for 1-3 minutes until a gel is formed

1/3 Cup Water

1 Cup Cashewsdessert18

1/3 Cup packed Mint (see to the right, I just plucked from our ginormous mint plant!)

1/2 Cup Raw Honey

1 1/2 tsp Spirulina Powder

1-2 tsp Vanilla

1-3 Drops of Peppermint Essential Oil (careful! It’s strong and you can always add more!)

1 Tbsp Coconut Oil

Directions:

1) In a high-speed blender, combine all ingredients (after Irish Moss gel is made) and process until smooth and creamy.

2) Pour into your cheesecake or pie tin.

3) Top with some fresh mint and/or cacao powder.

4) Let set for at least 4 hours before cutting and serving.

5) To serve, garnish with fresh mint and/or raw chocolate sauce which can be found here.
