{Raw} Coconut-Cilantro Wraps with Fiesta Guacamole

Hello everybody!

I understand it’s been a long time since I posted a recipe – don’t fret! I’m back and with more culinary inspiration than ever! The reason it has been so slow is that I have been traveling and Farm of Life (the retreat center I’m a chef at) always closes for November. So it’s been simple eating and relaxation for me.

But enough of that – it’s back to blending, stirring, and dehydrating away as we’re almost full of guests again and they’re hungry! Thankfully I’ve got some help for the retreat season… Meet Susan and Lorna! They’re turning into great friends and Lorna is another amazing raw chef, so it’s plenty of fun here.

Today I’m bringing you a vision I’ve had for a while. Coconut meat is so nutritive and the wrap below is very easy to make.

{Raw} Coconut-Cilantro Wraps

Ingredients:

2 Cups Coconut Meat (Young Thai Coconuts)

1/8 Cup Coconut Water

Optional: Dash of Sea Salt

1/3 Cup Cilantro, roughly chopped

Directions:

1) In a high-speed blender (you’ll need a tamper or a spoon to stop and stir contents around), blend all ingredients except Cilantro on high until smooth and creamy.

2) Using a spatula, scrape contents onto two Teflex dehydrator sheets over mesh screens. Spread to form a 1/16 inch thick wrap.

3) Dehdydrate at 115 degrees for 5 hours, flip, and dehdyrate for 2-3 more.

4) Use with the guacamole below or with your favorite filling ingredients.

Guacamole is pretty simple and standard to make. The following recipe is a guide for you to experiment with, feel free to add anything else that you’d like!

Fiesta Guacamole!

Ingredients:

2 Avocadoes, squished with a fork in a bowl

1/2 Lemon or Lime, Squeezed

1 Clove Garlic, crushed and finely diced

1/3 Onion, finely diced

1/2 Bell Pepper, finely Diced

1/2 Cup Cilantro, finely diced

1/2 tsp Chili Powder, Chipotle Powder, and Onion Powder

1/4 tsp (or more if you’d like) Sea Salt

Directions:

1) In a bowl, mash avocado with a fork. Add remaining ingredients and stir until well combined.

2) Store in an air-tight container for 2-3 days or use immediately. Feel free to add any other herbs you’d like!
