Raw {Easy} Blueberry-Vanilla Granola

Tis the Season with Raw Blueberry-Vanilla Granola!

Hey friends!

Who doesn’t love blueberries? These anti-oxidant powerhouses are full of vitamins, minerals, living energy, and darn delicious phytonutrients! There’s a reason they’re on the top-10 list of health-promoting/cancer-fighting/and anti-aging foods, it’s because they just plain rock.

That said, let’s kick this New Year’s off RIGHT with a delicious and purifying [raw & vegan] blueberry granola. :)

First off – I have some personal New Years Resolutions of my own. MandyBloomsRaw is going to bloom into an even more personal website/blog with many more recipes, and hopefully some video recipes as well. I’d like to connect more with you, my loyal readers, and want this to be a place of raw-kin inspiration (okay, that was corny) and just fun all around.

Raw Blueberry-Vanilla Granola
Prep Time:
(Soak & Sprout Buckwheat, Nuts, and seeds = 8 hours minimum)
45 minutes to prepare, spread on dehydrator sheets
10-12 hours dehydrating

Ingredients:
1 ½ Cups of Buckwheat Groats (soaked & sprouted overnight – 1 day = 3 cups of Buckwheat)
3 Cups of your choice of Nuts/Seeds (soaked at least 8 hours) Examples: Almonds, Macadamia Nuts, Pecans, Walnuts, Hazelnuts, Cashews…etc.
2 Cups of Pitted Dates (Medjool are delish) (soaked in water for 1 hour)
½ tsp vanilla extract or 1 tsp vanilla powder
¼ tsp cinnamon
¼ cup Maple Syrup
2 Cups of Blueberries
½ Cup Blueberries set aside

Directions:
1) In a bowl, combine buckwheat sprouts and assorted nuts and seeds. If you don’t like whole nuts and seeds, food process them into an acceptable size.
2) In a high-speed blender, combine dates, vanilla, cinnamon, blueberries (2 Cups), and maple syrup. Blend.
3) Scoop mixture into bowl with buckwheat and seed/nut mixture and combine thoroughly. Add in the rest of the blueberries.
4) On parchment paper or Teflex sheets, spread the layer ¼ inch thick (or more/less depending on personal preference) and dehydrate 8-12 hours at 105 degrees. After this time period, flip the granola over and dehydrate the remaining (approximate) 6 hours until crunchy and done.
5) Save and eat this as a snack, enjoy for breakfast with almond milk, or create delectable desserts with it!

Hopefully you liked this easy, but very delicious granola. Raw food snacks and staples are seriously essential when it comes to succeeding when eating this way because you have to PLAN ahead and have back-ups when you’re hungry/looking for healthy alternatives.

Granola is always a favorite because it can travel everywhere and can basically be host to ANYTHING you’d like to put in it. For example, I taught this recipe to a family (I’m teaching raw food classes to) and we added some super-foods like Maca (great for hormonal balance & happiness)!!
It’s so easy to eat healthy, hopefully this recipe inspires you to keep up your perseverance for awesome health this fabulous New Year.
