{Raw, Vegan} Cashew Cream Fruit Salad

Hola lovelies!

It’s been busy here at the Farm of Life, where I’m cheffin’ up tons of wholesome, healthy food for guests around the world. This is one of the first recipes I served to the recent Animar Retreat, and promised to post it because there were soooo many requests for it!


One of my favorite things about the retreats are the incredible people I get to meet. I’ve made so many beautiful connections with unique individuals – all on their own path, and to share the same space for a week – 10 days is incredible.

But back to this recipe… It’s super simple, incredibly delicious, and wonderful fun to make for breakfast, a snack, or dessert.


Cashew Cream Fruit Salad

Serving Size: 3-4 People

Preparation Time: 10-15 Minutes



Cashew Cream:

1 cup organic raw cashews, soaked for 2 hours

1/4-1/2 cup filtered water depending on desired thickness

1-2 Tbsp maple syrup, or more to taste

1/2 tsp natural vanilla extract, or a little more to taste

a pinch of Celtic sea salt


Fruit Salad:

8-9 Bananas

3 Apples

1/2 Cup Cacao Nibs

3/4 Cup Shredded Coconut



1) In a high speed blender (like the Vita-Mix or the Blend-Tec), combine all cashew cream ingredients until smooth.

2) Using a knife and cutting board, slice all fruit into bite-sized pieces, and place in a medium-sized bowl.

3) Pour your cashew cream over your fruit, stir in cacao nibs and shredded coconut.

4) If you’d like less cream, leave it out or add more fruit (of a sweet, denser variety). Place some cacao nibs or beautiful flowers on top to serve.



What a delicious treat! Consuming this meal for breakfast will allow you to easily feed your body high levels of Potassium, Magnesium, Vitamin A, Vitamin C, Healthy monosaturated fats (which boost your metabolism), Selenium, and tons of love!
